Main Ingredients-
Oil – for deep frying
Green chilli – 1
Ginger n garlic paste- 1 + ½ tbsp
Onion(chopped) – 2
Beetroot – ½ cup
Green Peas – 4 tbsp
Carrot (chopped) – 1
Capsicum 1/2 cup
Cabbage – 1/2 cup
Black pepper – 3 tsp
Salt
Amchoor – 1/4th tsp
Garam masala powder – 1/2 tsp
Red chilli powder – 1/2 tsp
Rice flour – ½ cup
Coriander leaves – 2 tbsp
Potato ( boiled)- 3
Maida (for making thick paste)- 2 to 3 tbsp
Maida – 1/4th cup
Water – to make maida paste
Breadcrumbs – 1/2 cup
Method –
In a bowl take 4 tbsp of green peas(matar)
Add 1/2 cup of cabbage
Add 1/2 cup of beetroot
Add 1/2 cup of capsicum
Add 1 medium sized carrot
Boil the vegetables till they become tender and mashable
Add 3 to 4 boiled potatoes
Mash all the vegetables and potatoes together
After properly mashing add 1/4th cup of maida
Add 2 finely chopped onions
Add 1 + 1/2 tbsp of ginger & garlic paste
Add 1 chopped green chilli
Add 1/4 th tsp of amchoor powder
Add 1/2 tsp of red chilli powder & garam masala
Add 2tsp of crushed black pepper
Add 2tbsp of finely chopped coriander leaves
Add salt
Mix all the ingredients properly
Add 1/2 cup rice flour
Grease your hands with cooking oil
Take small portions of mixture and shape them into oval shape
Take 1/2 cup of finely powdered bread crumbs
Add 2 tbsp of sesame seeds
Take 2-3 tbsp of maida
Add 1tsp of crushed black pepper powder
Add water little by little and make a thick slurry from maida for coating cutlets
Mix properly so there are no lumps
Take cutlet coat it with maida paste first
Then coat it with bread crumbs and sesame seeds mixture
Take a pan and heat oil for deep frying cutlets
Keep flipping the cutlets in oil so they get fried uniformly
Fry the cutlets until they turn light brown in colour
Take out cutlets from hot oil on tissue paper to absorb excess oil
Serve hot!
